Welcome to the "A-ha" Coffee Moment.
Yirgacheffe, Ethiopia is one of the most classic and appreciated growing regions in the world, producing many a cup that have acted as the “a ha” moment for coffee pros and enthusiasts alike. There is a certain elegance to their acidity, the balance between fruit and florals, and the honey-like sweetness that is so distinctly a “Yirg,” the short hand term they are sometimes described as.
This particular coffee from Yirgacheffe is a special one that we’ve tasted many times over the years, but this is the first time we are roasting this for release ourselves. What makes it unique is the “Z” classification in its name, which is to denote that it is “Zero Defect.”
This is a hard thing to guarantee, even with high quality producers, there are invariably many hands and steps to the coffee producing process, from harvest to sorting to fermentation. In Ethiopia, the majority of coffees produced are also mixed heirloom varieties, with scant traceability on the particulars of those varieties in many cases.
Roasting this coffee, the fragrance reminded us of several stellar washed Ethiopian coffees we’ve carried in the past, from the vibrant Nitsu Ruz in 2016/2017 to an Anaerobic Sidama we shipped earlier this year for Odyssey. In the cup it is on par with these selections.
Brew hotter to allow florals to shine through (201-202F) or cool it down a few degrees and slow your extraction time for a bigger fruit bomb.

All online orders are roasted to order and added to our next roast date. We roast Mondays and Wednesdays, orders placed by 8AM on roast days will be roasted that day, otherwise the coffee will be roasted on our next roast date.
